My First Time: Making Vegan Sandwiches

Oddly enough, during my month of veganism, I never really ate any vegan sandwiches. I guess, in my head, I’ve always associated sandwiches as needing a juicy piece of meat (or melted cheese) in the middle of two pieces of plain bread. Oh, how naive I have been. Since I’m trying to eat more plant-based and whole foods this year, I thought I would try my hand at making sandwiches. Instead of just using plain bread as well, I decided to venture out of my food comfort zone and try out Ozery Bakery’s OneBun to take my vegan sandwiches to the next level.

Ozery Bakery’s new Organic Wheat OneBun is packed with all of the fiber, minerals and proteins that you need on the reg. Even though it sounds super healthy (which it is), the OneBun definitely still tastes amazing and pairs well with literally everything.

Here are the three vegan sandwiches I made featuring the yummy OneBun:

Vegan Garden Veggie Sandwich

I n g r e d i e n t s :

S t e p s :

  1. Toast your OneBun.
  2. When they’re done, simply put as much vegan cream cheese as you want to eat side of the OneBun.
  3. Pile on as many veggies as your heart desires! This one is the easiest vegan sandwich to make, but is also super light and delicious for the summer. The whole grains in the OneBun also add a delicious texture to this simple sandwich.

Rainbow Veggie Sandwich

I n g r e d i e n t s :

Basil Almond Ricotta Ingredients:

  • 1 cup blanched almonds
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup fresh basil
  • 1 medium garlic (finely chopped)
  • Salt (to taste)
  • 1 lemon (juiced)

Rest of sandwich:

  • Organic Wheat OneBun
  • 1 carrot
  • 1 beet
  • ½ cucumber
  • 1 avocado
  • ¼ small red cabbage
  • 1 cup sprouts
  • Cherry tomatoes
  • Salt (to taste)
  • Pepper (because it’s delicious)

S t e p s :

  1. Toast your OneBun!
  2. Soak almonds for 1 hour. Rinse and drain the almonds and add to food processor with ⅓ cup of water, olive oil, basil, salt, and lemon juice. Process until smooth (but make sure it still has some texture).
  3. Stack almond ricotta and veggies onto OneBun, cut in half and take the biggest bite you possibly can!

Strawberry Avocado Chickpea Salad Sandwich

I n g r e d i e n t s :

  • ½ ripe avocado
  • 1 can of chickpeas (drained and rinsed, duh)
  • 1 medium stalk of celery (diced)
  • 1 medium carrot (diced)
  • 1 lemon (juiced)
  • ½ bell pepper (sliced)
  • ¾ cup of strawberries (diced)
  • 3 tablespoons of hummus
  • Salt (to taste)
  • Pepper (to taste even better)
  • Organic Wheat OneBun

S t e p s :

  1. Throw your OneBun into the toaster for the desired amount of time.
  2. Mash up your avocado.
  3. In a separate (larger) bowl, mash up your chickpeas (a potato masher works really well). Then stir celery, bell pepper and carrots into your mixture. Add in lemon juice and strawberries and stir some more!
  4. Take your nicely-toasted OneBun out of the toaster and add avocado to one side and chickpea salad to the other. Then dig in!

Eating a more plant-based and whole foods diet is actually super simple when you add the right basics into your everyday meals. The simple addition of Ozery Bakery‘s Organic Wheat OneBun to your grocery list is a small change that will make such a huge difference in your diet (and such a delicious difference to your sandwiches).

  2. I am seriously, seriously drooling here! IT IS MIDNIGHT. WHY AM I SO HUNGRY. Those vegan sandwiches look soon good. especially that middle one– that is my lunch dream. I’m gonna make it when I have time. It’s so funny because for me, sandwiches are usually vegan. really do I ever put any meat or cheese in my sandwiches. I don’t know, I prefer plant based stuff– just cuz it’s lighter on the tummy ;).
